My mother loves Madelines, so being the “wonderful” daughter that I am 🙂 – well at least one that loves to cook and please people – especially the woman that birthed her. I have purchased myself a few madeline pans of various sizes and made sure I’ve found a recipe that I like and comes out each time I use it. This one from the Food Network hasn’t steered me wrong yet.

Make sure when you’re browning your butter you keep a close watch, it can burn on you very quickly.

you want to make sure you fold the last of the ingredients in, the cookies are very delicate at this point.
On my small pan I found a 1 Tbsp spoon is almost the perfect size
